I tried to avoid moving any gas/water lines this would send the price
of your renovation sky rocketing. I kept the fridge, sink and cook top
In their existing locations. I then combined the range and the cook top to save counter space.
I am proposing to keep the existing wall by the fridge in place except for a small portion of it to be demoed and turned into a sort of island with seating along the one edge. This will really open the space up into the living area.
As for the dining room I am not proposing you change much except if you would like to have an easy place to mount a TV for the living room you could extend a wing wall here to allow you to easily mount a TV with all of the wires hidden. This optional feature also provides enough separation from the living space so that if you have guest over on a sleeper sofa, others could still comfortably sit at the table without disturbing the guest.
Bathrooms I suggest a wall hung sink for the guest bathroom to make the space feel larger. vanity and medicine cabinet selections are your choice. The master bath I suggest something similar, getting a vanity that is on legs or wall hung to appear as if it is floating will make the space feel larger.
Other improvements that I am proposing would be to paint all of your doors and trim a clean white paint. Finally I would purchase LVT (luxury vinyl tile) it’s not really that expensive but it is more durable than normal vinyl flooring. I would get a wide plank and run it throughout the whole unit.
Overall you can make this space, a very nice and comfortable home without ripping everything out.
